BBQ Rabbit Kebabs - From Jack Pyke Shop

The perfect BBQ meal after a hard day's hunting!

Ingredients

  • Serves 4 
  • 500g Rabbit
  • 2 courgettes
  • 2 peppers
  • 6 sticks rosemary lower leaves
  • removed or skewers
  • 1 X Handful sage
  • 1 X Handful thyme
  • 1X Handful rosemary
  • 1 X Desert spoon juniper berries
  • 3 X Cloves garlic
  • Zest & juice of 1 lemon
  • Salt & pepper

METHOD

Chop rabbit, courgettes and peppers into bite size bits and place in a bowl. Blitz herbs, garlic, berries and lemon in food processor. Add olive oil & season.

Marinade rabbit and vegetables in this 2- 3 HOURS. Slide alternate bits of the rabbit and vegetables onto the skewers. BBQ for 10 minutes turning occasionally. Check meat is cooked and serve with a fiery watercress salad and whole grain mustard. Add a punchy Rioja very tasty.
